Fueling a body is important when tackling the big hill, or running that extra mile. A great source of energy can be found in carbohydrates. Here is a tasty recipe that provides a good balance of carbs and protein. (Please keep in mind that the following recipe contains a nut product. Just a heads up for those with allergies.)
And everybody loves a little energy in bite size form!
No-Bake Energy Bites
(makes 18-20 bites)
1 cup oatmeal
1/2 cup peanut butter (or other nut butter)
1/3 cup honey
1 cup coconut flakes
1/2 cup ground flaxseed
1/2 cup mini chocolate chips (or dried cranberries)
1 tsp vanilla
Mix everything above in a medium bowl until thoroughly incorporated. Let chill in the refrigerator for half an hour. Once chilled, roll into 1- or 2-inch balls. Store in an airtight container and keep refrigerated for up to 1 week.
